Vibrant green baby cabbage ( Brussel sprouts/ chhote ghobi) in rich tomato gravy.
Baby cabbage / Brussels sprouts are a rich source of vitamins A, C, folic acid and dietary fiber .They have high amounts of phytonutrients (or plant nutrients) a chemical called `Sinigrin', which has a protective action against colon and breast cancer. It is also excellent for people who are on a low calorie diet or are suffering from rheumatoid arthritis.The low protein and potassium content of
the seasonal vegetable makes them an excellent food for people with
kidney insufficiency. too.

Ingredients




Baby cabbages /Brussels sprouts 15 no:s

Onion,chopped 2 medium size

Salt and black pepper to taste

Tomatoes,diced 2 cups

Olive oil 8 tsp

Garlic, minced 1 pod / clove

Dried basil leaves /mixed herbs 2 tsp

Swiss cheese (optional) 1 cup grated
Method



Wash and trim baby cabbages, remove any discolored or yellowed leaves

Cut the baby cabbages in half vertically from stem end

Apply a thin layer of olive oil on cut side of each (1tbsp oil)

Heat a pan and add 1 tbsp of the oil

Place the baby cabbages with the cut end facing the pan,on low heat till it appears golden brown (it gets a kind of caramel taste)

Take and keep aside .

In the same pan now saute the onions and garlic till translucent and tender

Add the cut tomatoes, basil, salt and pepper powder

Let it simmer for 8-10 minutes or till it appears like a sauce

Add the baby cabbages to it and let simmer for 2 minutes, check if the vegetable is tender all over and evenly done

Sprinkle grated cheese (optional) and serve hot


Variations
Baby cabbages/ Brussel sprouts can be substituted with Prawns for non-vegetarians.
